Morning Gloomy Muffins

Living in the LA Basin, it is not often that I wake up to clouds and fog. But this weekend (my days off) it has been super gloomy out and it makes me:

  1. want to sleep
  2. want to bake
  3. want to be lazy
  4. want to pray for sun

So, yesterday in my gloomy mood, I made a superfood/paleo version of a popular muffin called Morning Glory. These muffins are known for being healthier than the average muffin. They are chock full of nuts, diced apple, carrots, raisins and wheat bran. They have a lovely name too. However, the non-glorious weather encouraged me to name my version Morning Gloomy Muffins. They will not make you feel gloomy. They don’t taste gloomy. But as someone who does not regularly eat baked goods, these will probably only get made when it’s gloomy outside.

My recipe making method

After I made them, I decided I needed to get out of the house because I was being lazy and would have sat on my butt all day if I didn’t force myself to go workout. So I went to the gym, did a barbell strength class with a little metabolic conditioning at the end. Points for me for listening to my inner-coach.

My Gloomy Muffin

Morning Gloomy Muffins

1/2 c. coconut flour
6 eggs
1/2 c. butter, melted
1/2 c. coconut milk
1 Tbsp. vanilla extract
1/4 tsp. baking soda
1/2 tsp. sea salt
2 tsp. cinnamon
1/2 tsp. ginger
1/2 c. goji berries
1 c. shredded coconut
1/2 c. sunflower seeds
1c/ shredded sweet potato (yam)
1/2 c. cacao nibs

  1. Preheat oven to 350
  2. In a bowl, mix together butter, eggs, coconut milk, and vanilla.
  3. In another bowl, mix coconut flour, baking soda, salt, and spices.
  4. Slowly add dry mix to the wet mix and stir until evenly combined
  5. Fold in remaining ingredients.

  6. In a muffin pan (lined or greased) divide batter among the muffin cups. This will make about 12 regular sized muffins.

    They will not rise too much

  7. Bake for 25 mins until browned on top.
